Gluten-Free Lemon Zucchini Pasta

The perfect summer pasta using ingredients that are in season and gluten-free

Ingredients
  

  • 1 box of gluten-free pasta I like Jovial
  • 1 zucchini sliced lengthwise and then cute again (they should look like moons)
  • 1 lemon zested and 1/2 the lemon juice
  • 2 tbsp ghee
  • 2 tbsp avocado oil
  • 1 tbsp fresh chopped basil
  • 1/2 tbsp fresh chopped mint
  • 1.2 tbsp fresh chopped parsley
  • 1 shallot minced
  • 1 garlic clove minced
  • 1/4 cup crumbled feta cheese
  • salt and pepper to taste

Instructions
 

  • In a medium pot, cook the pasta according to the package
  • In a large skillet, add 1 tbsp of avocado oil, shallot, and garlic. Cook for about 2 minutes.
  • Add the zucchini and another tbsp of the avocado oil and cook for about 5 minutes. You don't want them soggy. Add a little salt and pepper to taste.
  • Drain the cooked pasta and add to the skillet with the zucchini. Add the lemon zest, lemon juice, ghee, and a bit more salt and pepper for flavor.
  • Turn off the heat and add the herbs and fresh crumbled feta.
  • Serve and enjoy!
