In a medium pot, cook the pasta according to the package
In a large skillet, add 1 tbsp of avocado oil, shallot, and garlic. Cook for about 2 minutes.
Add the zucchini and another tbsp of the avocado oil and cook for about 5 minutes. You don't want them soggy. Add a little salt and pepper to taste.
Drain the cooked pasta and add to the skillet with the zucchini. Add the lemon zest, lemon juice, ghee, and a bit more salt and pepper for flavor.
Turn off the heat and add the herbs and fresh crumbled feta.
Serve and enjoy!
