Gluten-Free Lemon Zucchini Pasta
The perfect summer pasta using ingredients that are in season and gluten-free

- 1 box of gluten-free pasta I like Jovial
- 1 zucchini sliced lengthwise and then cute again (they should look like moons)
- 1 lemon zested and 1/2 the lemon juice
- 2 tbsp ghee
- 2 tbsp avocado oil
- 1 tbsp fresh chopped basil
- 1/2 tbsp fresh chopped mint
- 1.2 tbsp fresh chopped parsley
- 1 shallot minced
- 1 garlic clove minced
- 1/4 cup crumbled feta cheese
- salt and pepper to taste
In a medium pot, cook the pasta according to the package
In a large skillet, add 1 tbsp of avocado oil, shallot, and garlic. Cook for about 2 minutes.
Add the zucchini and another tbsp of the avocado oil and cook for about 5 minutes. You don't want them soggy. Add a little salt and pepper to taste.
Drain the cooked pasta and add to the skillet with the zucchini. Add the lemon zest, lemon juice, ghee, and a bit more salt and pepper for flavor.
Turn off the heat and add the herbs and fresh crumbled feta.
Serve and enjoy!
