Who doesn’t love chicken nuggets? Every time I make them for my boys, I can’t help but sneak in on or two nuggets for myself LOL. When Niko was in his picky eating phase, all he would eat is chicken nuggets. But even the gluten free frozen brands on the market were filled with a bunch of unnecessary ingredients. I wanted to be able to control what I was feeding my children. 

Our mommy duties are always keeping us busy and there are some days we just want to reach for something in the freezer. I had two chicken breasts that I didn’t know what I wanted to do with so I cubed them up and made homemade chicken nuggets with whatever I had on hand. They were delicious. Make them for dinner, school lunches, or pop them in a glass container and freeze. You can definitely just make a huge batch of these to freeze and bake when ready. Super and easy and satisfying knowing your kids are eating something healthy and filled with pure ingredients.

Gluten Free Chicken Nuggets

Course Main Course

Ingredients
  

  • 1/2 cup Mary Gone Crackers crushed into crumbs(any flavor will do, I had Super Seed in my pantry)
  • 1/3 cup ground flax seeds
  • 1/4 cup chia seeds
  • 1 tbsp arrowroot flour
  • 2 chicken breasts cubed
  • salt and pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • dash of paprika
  • 1/4 cup of coconut oil avocado oil, or olive oil

Instructions
 

  • Pre heat over to 375
  • In a large bowl, add your cubed chicken, salt and pepper, onion powder, garlic powder, paprika, chia seeds, and arrowroot flour and mix
  • In a small bowl add your desired oil
  • In a plate, add the crushed crackers and flax seeds and mix
  • Take a chicken cube and lightly dip in the oil and then dip in the cracker mixture
  • Spread them out onto a baking sheet lined with parchment paper
  • Bake in oven for about 20 min
  • Serve with ketchup and enjoy 🙂
