Gluten Free Chicken Nuggets

Course: Main Course

Ingredients
  

  • 1/2 cup Mary Gone Crackers crushed into crumbs(any flavor will do, I had Super Seed in my pantry)
  • 1/3 cup ground flax seeds
  • 1/4 cup chia seeds
  • 1 tbsp arrowroot flour
  • 2 chicken breasts cubed
  • salt and pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • dash of paprika
  • 1/4 cup of coconut oil avocado oil, or olive oil

Method
 

  1. Pre heat over to 375
  2. In a large bowl, add your cubed chicken, salt and pepper, onion powder, garlic powder, paprika, chia seeds, and arrowroot flour and mix
  3. In a small bowl add your desired oil
  4. In a plate, add the crushed crackers and flax seeds and mix
  5. Take a chicken cube and lightly dip in the oil and then dip in the cracker mixture
  6. Spread them out onto a baking sheet lined with parchment paper
  7. Bake in oven for about 20 min
  8. Serve with ketchup and enjoy :)
