Za’atar is a spice I’ve grown up enjoying all throughout my childhood. Mix the spice in a little olive oil and spread it on a crispy tortilla makes this lunch unique and tasty. Here’s what you need!

  • Siete tortillas
  • Hummus
  • Za’atar seasoning
  • Olive oil
  • Cucumbers 
  • Tomatoes
  • Red onions
  • Mint
  • Parsley 
  • Lemon
  • Salt and pepper 
  • Vegan feta cheese (optional)

Crispy Za’atar Tostada with Cucumber Salad

Ingredients
  

  • 4 grain-free tortillas I like Siete
  • 4 tbsp hummus of choice
  • 4 tbsp za’atar seasoning
  • 1/3 cup olive oil plus 3 tbsp
  • 1/2 cucumber diced
  • 1 to mato diced
  • 1/4 red onion diced
  • 1/4 cup fresh mint chopped
  • 1/4 cup parsley chopped
  • 1 lemon juiced
  • arugula
  • salt and pepper to taste
  • vegan feta optional

Instructions
 

  • Preheat oven to 400°
  • Brush or spray the tortillas with avocado spray or oil and roast tortillas in the oven on a baking sheet for about 4-5 minutes until crispy. Keep an eye on them because they will burn.
  • Meanwhile, in a large bowl, add the cucumbers, tomatoes, bell pepper, onion, parsley, mint, lemon juice, salt, pepper, and 3 tbsp olive oil. Set aside.
  • In a small bowl, add the za’atar seasoning, salt, and remaining olive oil. mix and set aside.
  • One each crispy tortilla, add about 1 tbsp or so of hummus and spread.
  • Then, spread the za’atar marinade. Top with aurgula, and cucumber salad.
  • If using, add crumbled vegan feta rght on top and enjoy!
