Preheat oven to 400°
Brush or spray the tortillas with avocado spray or oil and roast tortillas in the oven on a baking sheet for about 4-5 minutes until crispy. Keep an eye on them because they will burn.
Meanwhile, in a large bowl, add the cucumbers, tomatoes, bell pepper, onion, parsley, mint, lemon juice, salt, pepper, and 3 tbsp olive oil. Set aside.
In a small bowl, add the za'atar seasoning, salt, and remaining olive oil. mix and set aside.
One each crispy tortilla, add about 1 tbsp or so of hummus and spread.
Then, spread the za'atar marinade. Top with aurgula, and cucumber salad.
If using, add crumbled vegan feta rght on top and enjoy!
