Ingredients
- Siete tortillas
- Hummus
- Za’atar seasoning
- Olive oil
- Cucumbers
- Tomatoes
- Red onions
- Mint
- Parsley
- Lemon
- Salt and pepper
- Vegan feta cheese (optional)

This cucumber salad can be made ahead of time and stored in an airtight container. Perfect for meal prep or those busy weekdays.

Crispy Za’atar Tostada with Cucumber Salad

Ingredients
- 4 grain-free tortillas I like Siete
- 4 tbsp hummus of choice
- 4 tbsp za’atar seasoning
- 1/3 cup olive oil plus 3 tbsp
- 1/2 cucumber diced
- 1 to mato diced
- 1/4 red onion diced
- 1/4 cup fresh mint chopped
- 1/4 cup parsley chopped
- 1 lemon juiced
- arugula
- salt and pepper to taste
- vegan feta optional
Instructions
- Preheat oven to 400°
- Brush or spray the tortillas with avocado spray or oil and roast tortillas in the oven on a baking sheet for about 4-5 minutes until crispy. Keep an eye on them because they will burn.
- Meanwhile, in a large bowl, add the cucumbers, tomatoes, bell pepper, onion, parsley, mint, lemon juice, salt, pepper, and 3 tbsp olive oil. Set aside.
- In a small bowl, add the za’atar seasoning, salt, and remaining olive oil. mix and set aside.
- One each crispy tortilla, add about 1 tbsp or so of hummus and spread.
- Then, spread the za’atar marinade. Top with aurgula, and cucumber salad.
- If using, add crumbled vegan feta rght on top and enjoy!
