Citrus Fennel Salad on white platter

I love a good salad whether it’s as a main dish, side dish, brunch, etc… There are so many different creative ways to create a tasty salad. With it being winter, I decided to create a simple salad using ingredients that are in season. So this one is with using a ton of winter citrus fruits with fennel to give it a great balance and a hint of crunchy veggies.

Citrus Fennel Salad

I love a good salad whether it's as a main dish, side dish, brunch, etc… There are so many different creative ways to create a tasty salad.
Course Salad

Ingredients
  

  • Salad
  • 3 fennel
  • 1 grapefruit
  • 2 blood oranges
  • 3 navel oranges
  • 2 tbsp toasted pepitas
  • Dressing
  • 1 navel orange juiced
  • 1 tbsp chopped fresh mint
  • 2 tbsp olive oil

Instructions
 

  • For the salad, peel and slice all the orange/fruit and set aside
  • Cut fennel in half and slice thinly
  • Arrange the fruit and fennel on a serving platter and alternate between the fruits and the fennel.
  • For the dressing, in a bowl, whisk together the olive oil and juice of one orange, and chopped mint.
  • Pour dressing over the salad and top with pepitas
  • *NOTE* you don’t need a ton of dressing, just enough to lightly coat
  • Enjoy!
