Method
- For the salad, peel and slice all the orange/fruit and set aside
- Cut fennel in half and slice thinly
- Arrange the fruit and fennel on a serving platter and alternate between the fruits and the fennel.
- For the dressing, in a bowl, whisk together the olive oil and juice of one orange, and chopped mint.
- Pour dressing over the salad and top with pepitas
- *NOTE* you don't need a ton of dressing, just enough to lightly coat
