Citrus Fennel Salad
I love a good salad whether it's as a main dish, side dish, brunch, etc... There are so many different creative ways to create a tasty salad.
- Salad
- 3 fennel
- 1 grapefruit
- 2 blood oranges
- 3 navel oranges
- 2 tbsp toasted pepitas
- Dressing
- 1 navel orange juiced
- 1 tbsp chopped fresh mint
- 2 tbsp olive oil
For the salad, peel and slice all the orange/fruit and set aside
Cut fennel in half and slice thinly
Arrange the fruit and fennel on a serving platter and alternate between the fruits and the fennel.
For the dressing, in a bowl, whisk together the olive oil and juice of one orange, and chopped mint.
Pour dressing over the salad and top with pepitas
*NOTE* you don't need a ton of dressing, just enough to lightly coat
