Citrus Butternut Squash Smoothie

Another smoothie for the win. I truly love making smoothies. I’ve been making them for 7 years now, ever since I actually purchased my first Vitamix. We have them every single day and it’s such a great way to incorporate your fruits and veggies in a delicious drink. My boys love them. In fact, they literally will hang out right next to the blender and whine for the smoothie until its done blending. Raw fruits and veggies are always the best ways to eat them and get all the vitamins and minerals and I am so happy that the boys drink it all up each time I make it.

Here is a great one using leftover steamed butternut squash. I promise you, this won’t disappoint. Don’t let the squash freak you out because you can’t taste it mixed in with all the other fruits.

I like to drink this after a good breakfast or for a mid-day snack. it’s so yummy.

Lastly, can you say vitamin c? This smoothie is packed with a ton of vitamin c so be sure to drink this more often in the Fall and Winter time.

Citrus Butternut Squash Smoothie

Course Drinks

Ingredients
  

  • 1 banana
  • 3/4 cup steamed cubed butternut squash
  • 8 baby carrots
  • 1 cup frozen or fresh pineapple
  • 1/2 cup mangos fresh or frozen
  • 1/2 cup cauliflower fresh or frozen
  • 1 TBSP flaxseeds
  • 1 tbsp MCT oil optional
  • 1 cup of filtered water or juice of choice
  • small piece of fresh turmeric or 1/2 tsp ground turmeric
  • 1/2 organic gala apple
  • 1 tbsp fresh mint leaves
  • 1/2 lemon juiced

Instructions
 

  • Add the liquid first in the blender then all other ingredients that are not frozen. Just be sure to add all frozen items last to help the blender out. Lastly, add the remaining ingredients and blend. Should serve about 5 people.
