Cinnamon Carrot Oatmeal in Bowl

You guys know I have a picky vegetable eater on my hands which is so funny because my oldest eats everything under the sun. Both my husband and I eat everything so having a picky little man is strange and frustrating at times because I just want him to eat healthy, but he doesn’t take to it.I know a lot of mamas out there feel my pain, but don’t give up! Keep giving your little ones veggies with every meal so they get used to seeing it all the time. Also, have your child in the kitchen to watch you cook and sample them (sometimes that works for me and he’ll actually eat it).

Oatmeal is at least something he eats every single morning. He LOVES it soooo much which is great because it’s healthy and good for the heart. I make mine entirely healthy and sneak in those veggies any way I possibly can. This recipe is with carrots but I also use zucchini to mix it up whenever I can.

NOTE: I make a large batch to last about 3-4 days that way in the morning’s I just reheat what I need with some almond milk and then add the topping and mixtures.

Cinnamon Carrot Oatmeal in Bowl

Cinnamon Carrot Oatmeal

Course Breakfast

Ingredients
  

  • 2 cups of Plain Cooking Oats I use Bob’s Redmill Organic Gluten Free Quick Cooking Oats
  • 4 cups of filtered water
  • 1 small loose carrot grated finely
  • ½ of banana
  • ½ tbsp of fresh ground almond butter or any nut butter of your choice
  • Dash of cinnamon just eyeball it based on how much you like. I do A LOT
  • Splash of unsweetened vanilla almond milk milk of your choice

Instructions
 

  • Cook oatmeal as instructed on your instructions. If following my recipe, bring water to a bowl, then add the oatmeal, cinnamon, and grated carrots. Stir occasionally. It will cook fast so don’t leave the kitchen.
  • Once all the water is soaked into the oatmeal turn off the heat.
  • Divide what you want into each bowl. (Store the rest in a glass container in the fridge once cooled. You can always reheat more throughout the week which is what I do). Then add a splash of almond milk, a half of banana, and a small scoop of almond butter. Mash it all
  • together and serve.
  • Sometimes I add berries or raisins on top but I never add sugar or sweeteners because the bananas will sweeten it right up naturally.
