Fall is my favorite time of year when it comes to cooking. I try to get my pumpkin spice fix every chance I get so why not turn my family favorite granola into a Fall granola. 

I made this yummy snack a few years back when I wanted to control the ingredients I was putting into my food. Since it was Fall, I included pumpkin pie spice which really gives it a warm flavor along with the cinnamon. I also wanted to make sure the granola I ate was gluten free and vegan so I used the gluten and dairy free chocolate chips and ensured the oats and nuts were all free of gluten. I love the subtle taste of chocolate you get with each bite. Just be sure when making the granola, you add the chocolate chips right at the end when you take out your granola from the oven and mix it. The chocolate will melt and it is sooo tasty! 

You can definitely sub the nuts out with anything you like or prefer. They also sell pre-melted coconut oil so you don’t have to melt it yourself which is a huge lifesaver for someone like me who uses coconut oil a lot. I used a healthier alternative to sweeten up the granola just a tad by using maple syrup and coconut sugar. you can omit the coconut sugar if you prefer but I find just a little bit is fine and won’t make them super sweet. I don’t like it when granola is sweet and pure sugar.  Give it a try. You won’t be disappointed.

Chocolate Pumpkin Spice Granola

Chocolate Pumpkin Spice Granola

Ingredients
  

  • 3 cups of gluten free sprouted rolled oats or regular rolled oats
  • 1 cup of raw pecans roughly chopped
  • 3/4 cup of raw walnuts roughly chopped
  • 1/4-1/2 cup pepitas or pumpkin seeds roughly chopped
  • 2 tbsp chia seeds
  • 2 tbsp cacao nibs
  • 1-2 tbsp coconut sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp ground pumpkin spice
  • 1 tsp sea salt
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup dairy free chocolate chips

Instructions
 

  • Preheat over to 325 degrees
  • In a small bowl whisk together coconut oil, vanilla extract, and maple syrup and set aside.
  • Combine all the dry ingredients EXCEPT the chocolate chips and mix together.
  • Then add the wet ingredients to the dry ingredients and mix well. Pour the granola on a lightly greased large cookie sheet and spread evenly.
  • Bake for 20 minute, then mix it up and bake for another 5 minutes. Remove from oven and add the chocolate chips and mix while the granola is hot. Let the chocolate melt. Allow it to cool before storing in an airtight container.
