Preheat over to 325 degrees
In a small bowl whisk together coconut oil, vanilla extract, and maple syrup and set aside.
Combine all the dry ingredients EXCEPT the chocolate chips and mix together.
Then add the wet ingredients to the dry ingredients and mix well. Pour the granola on a lightly greased large cookie sheet and spread evenly.
Bake for 20 minute, then mix it up and bake for another 5 minutes. Remove from oven and add the chocolate chips and mix while the granola is hot. Let the chocolate melt. Allow it to cool before storing in an airtight container.
