Chocolate Pumpkin Spice Granola

Ingredients
  

  • 3 cups of gluten free sprouted rolled oats or regular rolled oats
  • 1 cup of raw pecans roughly chopped
  • 3/4 cup of raw walnuts roughly chopped
  • 1/4-1/2 cup pepitas or pumpkin seeds roughly chopped
  • 2 tbsp chia seeds
  • 2 tbsp cacao nibs
  • 1-2 tbsp coconut sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp ground pumpkin spice
  • 1 tsp sea salt
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup dairy free chocolate chips

Method
 

  1. Preheat over to 325 degrees
  2. In a small bowl whisk together coconut oil, vanilla extract, and maple syrup and set aside.
  3. Combine all the dry ingredients EXCEPT the chocolate chips and mix together.
  4. Then add the wet ingredients to the dry ingredients and mix well. Pour the granola on a lightly greased large cookie sheet and spread evenly.
  5. Bake for 20 minute, then mix it up and bake for another 5 minutes. Remove from oven and add the chocolate chips and mix while the granola is hot. Let the chocolate melt. Allow it to cool before storing in an airtight container.
