Burger Bowl

I can seriously eat a burger twice a week if you’d let me. But the older I”m getting, the cleaner of a diet I want to eat. But eating healthy doesn’t mean sacrificing good flavor. So I created this burger bowl so that it’s simple, quick, healthy, very clean, and something that can be prepped in advanced if needed. Hello Sunday meal prep.

Also, if you have little ones, I incorporated a few hidden veggies in these burgers and it was so good. You can omit them if you’d like but what’s wrong with a little extra veggie or two right?

Course Main Course

Ingredients
  

  • Burgers:
  • 1 lb grassfed organic ground beef
  • 1/4 yellow onion grated
  • 2 chopped garlic cloves
  • 2-3 baby carrots finely grated
  • 1 tbsp parsley chopped
  • 1/4 cup ketchup I used Primal Kitchen which has much cleaner ingredients and no sugar
  • 1/4 cup finely chopped spinach
  • salt and pepper to taste
  • onion and garlic powder taste
  • olive oil spray or anything you like
  • Sweet Potatoes:
  • 1 large sweet potato rinsed and sliced in rounds
  • onion and garlic powder
  • salt and pepper to taste
  • olive oil
  • Burger Dressing:
  • 1/2 cup of Homemade Mayo or primal kitchen I follow this recipe from the Defined Dish
  • 1/3 cup Primal Kitchen Ketchup
  • 1 -1 1/2 tbsp white wine vinegar
  • 1 1/2 tbsp of pickled relish
  • Salad Bowl and Toppings:
  • 1 cup chopped dino kale
  • 3/4 cup chopped romaine or iceberg lettuce
  • 1 sliced roma tomato
  • 2 dill pickles slices
  • cheese optional
  • pickled red or regular red onions optional
  • avocado optional

Instructions
 

  • Dressing:
  • Mix all ingredients in a bowl. Cover and refrigerate until ready to use.
  • Burgers:
  • In a large bowl, combine all ingredients and mix well with your hands.
  • Measure out about 1/3 cup of the meat mixture and roll into a ball. Then form 4 burger patties. Place on a baking sheet lined with parchment paper lightly greased with olive oil spray.
  • Make sure you make an indent in the middle of your patties so it won’t puff up when it’s cooking.
  • Then cook for about 15 min or until done and how you like it. If adding cheese for the little ones, add that on top of the burger and bake for 1 more min until melted.
  • Sweet Potatoes:
  • Slice sweet potatoes into rounds and place on lightly greased parchment paper. Drizzle with olive oil salt, pepper, onion powder, and garlic powder. mix and roast in the oven with the burgers for about 20-25 min or until they look finished.
  • To form the bowl:
  • In a large bowl, add you kale and romaine. Then add the burger in the center. Then add any toppings you’d wish to have and drizzle with the dressing.
