Oh, Fall…Tis the season to eat all things pumpkin spice and everything nice am I right? These Chocolate Chip Pumpkin Energy Bites are the ultimate Fall treat. You got the hint of pumpkin with that chocolate chip sweetness. These actually seem more like a healthier dessert but I eat them as a snack all the time.

As you can probably tell, I am in a bit of an energy bites kick. This is the third one being posted on the blog and that’s because 1) they’re so quick and easy to make 2) very healthy and made with fiber and healthy fat, and 3) makes a ton to store in the freezer to enjoy for a whole month. In fact, I usually will pull one out of the freezer each morning and add one in the kid’s lunchboxes for a treat.

I used pecans in this recipe because it just reminds me so much of Fall, but feel free to use cashews, walnuts, or even sun butter if your child goes to a nut-free school.

lastly, make sure you buy pumpkin puree and not pumpkin pie filling by mistake because they are very different.

Chocolate Chip Pumpkin Energy Bites

A healthy, quick and easy snack that will keep you full and satisfied and your little ones thinking it's a nice treat. Simple whole food snacks.

Cook Time 2 minutes

Equipment

  • Food Processor

Ingredients
  

  • 1 cup of pecans
  • 1 cup of dates
  • 2 tsp pumpkin pie spice
  • 2 tbsp organic pumpkin puree
  • 1 cup rolled oats gluten-free
  • 1 tbsp ground flax seeds
  • 1/4 cup vegan mini chocolate chips if not vegan, then chocolate chip of choice

Instructions
 

  • In a food processor, add all the ingredients EXCEPT the chocolate chips.
  • Blend until you see it start to form into a sticky ball (1-2 minutes)
  • Once blended and sticky, add chocolate chips and mix with a spatula
  • Using a mini scooper, roll each mix into mini balls and store in a glass container
  • You can also store in the freezer to make them last a while.
