Chocolate Chip Pumpkin Energy Bites

Ingredients
  

  • 1 cup of pecans
  • 1 cup of dates
  • 2 tsp pumpkin pie spice
  • 2 tbsp organic pumpkin puree
  • 1 cup rolled oats gluten-free
  • 1 tbsp ground flax seeds
  • 1/4 cup vegan mini chocolate chips if not vegan, then chocolate chip of choice

Equipment

  • Food Processor

Method
 

  1. In a food processor, add all the ingredients EXCEPT the chocolate chips.
  2. Blend until you see it start to form into a sticky ball (1-2 minutes)
  3. Once blended and sticky, add chocolate chips and mix with a spatula
  4. Using a mini scooper, roll each mix into mini balls and store in a glass container
  5. You can also store in the freezer to make them last a while.
