Ingredients

  • Birch Benders gluten-free pancake mix
  • pumpkin puree not pumpkin pie filling
  • cinnamon
  • pumpkin spice
  • Truvani vanilla protein powder
  • ground flax seeds
  • vegan chocolate chips
  • avocado non-stick spray or butter

Ingredients
  

  • 1 package of Birch Benders gluten-free pancake mix
  • 1/2 can pumpkin puree
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tbsp ground flax seeds
  • 1 scoop Truvani vanilla protein powder
  • 3/4 cup vegan chocolate chips
  • 1/2 cup filtered water for pancake consistency
  • avocado non-stick spray
  • Serving
  • butter regular or vegan
  • maple syrup

Instructions
 

  • In a large bowl, add all the ingredients EXCEPT the avocado spray and whisk well. You will need more water but start with 1/2 cup and add more until you reach the consistency you like. I personally, don't like mine super watery.
  • Heat your griddle and spray with the avocado spray.
  • Using 1/3 measuring cup, add the batter on the griddle. Cook for about 30 seconds per side.
  • Serve with vegan or regular butter and maple syrup and enjoy.
