Ingredients
- Birch Benders gluten-free pancake mix
- pumpkin puree not pumpkin pie filling
- cinnamon
- pumpkin spice
- Truvani vanilla protein powder
- ground flax seeds
- vegan chocolate chips
- avocado non-stick spray or butter

Pumpkin Chocolate Chip Pancakes (Gluten-Free, Dairy-Free)
Ingredients
- 1 package of Birch Benders gluten-free pancake mix
- 1/2 can pumpkin puree
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 1 tbsp ground flax seeds
- 1 scoop Truvani vanilla protein powder
- 3/4 cup vegan chocolate chips
- 1/2 cup filtered water for pancake consistency
- avocado non-stick spray
- Serving
- butter regular or vegan
- maple syrup
Instructions
- In a large bowl, add all the ingredients EXCEPT the avocado spray and whisk well. You will need more water but start with 1/2 cup and add more until you reach the consistency you like. I personally, don't like mine super watery.
- Heat your griddle and spray with the avocado spray.
- Using 1/3 measuring cup, add the batter on the griddle. Cook for about 30 seconds per side.
- Serve with vegan or regular butter and maple syrup and enjoy.
