Black Bean Tostadas with Citrus Slaw
Black Bean Tostadas with Citrus Slaw
Ingredients
- BLACK BEANS
- 1 cup dried black beans
- 4 garlic cloves peeled and smashed
- Water
- Salt and pepper to taste
- 1 tbsp cumin
- 1 tbsp paprika
- 1 tbsp chili powder
- 1 tbsp onion powder
- 1 lime zested
- 8 siete cassava tortillas or pre made tostada shells
- CITRUS SLAW
- 1/2 head green cabbage shredded or a bag a coleslaw
- 1½ limes juiced and zest
- 1/4 cup chopped cilantro
- 1 tsp dried oregano
- salt and pepper to taste
- 2 tbsp olive oil
- TOPPINGS
- Radishes
- Sliced avocados
- Hot sauce
- Jalapeños
- Cilantro
Instructions
- In a large pot, add the black beans, and nice amount of salt, and garlic cloves. Fill the pot half way up with water and boil the beans for about an hour and a half.
- Meanwhile, make the slaw by combining all the ingredients. Set aside.
- Once the beans are cooked, reserve some of the water (about 1/4-1/3 cup) from the beans and add the garlic beans and reserved water into a blender.
- Add in the cumin, chili powder, onion powder, paprika, lime zest, salt, and pepper. Blend until almost smooth.
- Preheat oven to broil.
- Lay tortillas on a baking sheet and broil for about 5 minutes. It cooks quick so keep a close eye on it so it doesn’t burn.
- Remove the tortillas from the oven, add a layer of the black beans, coleslaw, avocados, radishes, cilantro, hot sauce, and more lime juice.
- Serve and enjoy!
