- Preheat oven to 375
- Line parchment paper with unbleached parchment paper
- Add the sweet potato rounds and drizzle with olive oil and salt and bake for about 20 min and remove to cool slightly.
- While potatoes are baking, mix the ricotta with cinnamon and add the mixture into a ziplock bag.
- Cut the end of ziplock bag and pipe about 1/2 tsp onto each cooked sweet potato
- Top with walnuts, cranberries and a drizzle of honey.
- Pop back into the oven for 5 min to heat up.
- Remove and add a dash of honey.
