Mix together in a wide large bowl, the arrowroot and cassava flour with the seasonings icluding some salt and pepper. Then in another bowl, mix together the milk and lemon juice and the remaining buttermilk seasonings and let it sit for at least 10 minutes to create the buttermilk.
Next, season the chicken with a little salt and pepper. In about a 10-inch non-stick skillet, heat avoacdo oil for at least 2-3 minutes.
Dip the chicken in the buttermilk and then coat it in the flour mixture. Fry them in the avocado oil for about 4-5 minutes per side. Lay the cooked chicken on a wired rack to cool nd sprinkle with a little more salt.
While that’s frying up, make the sweet and spicy sauce by mixing all the ingredients in a wide bowl.
Lastly, coat the cooked fried chicken in the sauce. Then build your sandwich with all the tasty toppings.
Tip...If using buns, I recommend heating some ghee or butter in a skillet and placing the buns cut-side down to lightly toast the inside. You can enjoy this chicken in burger buns, lettuce wrap, or by itself.
