Preheat oven to 375°
Bring a large pot of water to a boil. Cook the lasagna noodles according to the package. Once cooked, remove them and place the noodles on a plate.
In a 9X11 baking dish, pour a good amount of pasta sauce to cover the bottom layer. Maybe about a 1/2 cup.
On a flat surface, lay out the lasagna noodles.
Add a small layer of ricotta, then a little shredded cheese, a few spinach leaves, and pepperoni. Roll them up one by one and place them into the baking dish.
Pour the remaining pasta sauce on top.
Then add a little more shredded cheese and pepperoni slices.
Bake covered for 20 minutes.
Uncover and bake for another 12 minutes.
Remove from the oven and top with fresh herbs and serve!
