Pepperoni Pizza Lasagna Roll-Ups

Ingredients
  

  • 1 box gluten-free lasagna noodles I like jovial
  • 1 jar of pasta sauce of choice I like the Whole Foods Organic Italian Herb
  • 1 cup fresh spinach
  • 1/2 cup vegan ricotta can sub for regular
  • cups organic shredded mozzarella
  • 1 package of turkey pepperoni slices I like Applegate
  • Basil for garnish
  • Parsley for garnish

Method
 

  1. Preheat oven to 375°
  2. Bring a large pot of water to a boil. Cook the lasagna noodles according to the package. Once cooked, remove them and place the noodles on a plate.
  3. In a 9X11 baking dish, pour a good amount of pasta sauce to cover the bottom layer. Maybe about a 1/2 cup.
  4. On a flat surface, lay out the lasagna noodles.
  5. Add a small layer of ricotta, then a little shredded cheese, a few spinach leaves, and pepperoni. Roll them up one by one and place them into the baking dish.
  6. Pour the remaining pasta sauce on top.
  7. Then add a little more shredded cheese and pepperoni slices.
  8. Bake covered for 20 minutes.
  9. Uncover and bake for another 12 minutes.
  10. Remove from the oven and top with fresh herbs and serve!
