Ingredients
  

  • 8 cups of vegetable or chicken broth
  • 3 cups shredded green cabbage
  • ½ bunch dandelion greens chopped (it’s a type of lettuce usually found near the kale in the produce section)
  • cup cilantro chopped
  • 14 ounce can diced tomatoes
  • 4 carrots diced
  • 4 celery sticks diced
  • 1 yellow onion diced
  • cups yukon potatoes diced optional)
  • 2 cooked chicken breasts diced or shredded
  • ½ tsp ground turmeric
  • 1 tsp ground cumin
  • 1 ½ lemons juiced
  • 2 tbsp avocado oil
  • Salt and pepper to taste

Method
 

  1. In a large stockpot, add the avocado oil. Then, add in the onions, carrots, celery, and potatoes. Season with salt and pepper for about 6-7 minutes.
  2. Next, add in the vegetable broth, diced tomatoes, turmeric, cumin, and lemon juice. Cover and cook for about 20 minutes.
  3. Open the lid and add in the dandelion, cabbage, cooked diced or shredded chicken, and cilantro and cover and cook for another 5-7 minutes.
  4. Adjust seasoning as needed, serve, and enjoy.
