Dairy-Free Patatas Bravas

A delicious Spanish staple that is simple and easy to make.

Ingredients
  

  • 1.5 lb yellow or baby potatoes sliced in half
  • 2 tbsp avocado oil
  • salt and pepper to taste
  • 1/4 cup romesco sauce I used the jar sauce by Chosen Foods)
  • garlic mayo recipe below
  • parsley for garnish
  • Garlic Mayo
  • 1/4 cup vegan mayo or whole30 approved mayo
  • 1.5 tbsp lemon juice
  • 2-3 garlic cloves rough chopped
  • pinch of salt

Method
 

  1. Preheat oven to 425
  2. In a mini food processor, blend together all the garlic mayo ingredients and place them in the fridge until ready.
  3. Boil water (about 2.5 cups) with salt. Once the water is boiled, place the halved potatoes and par-boil (cook) them for about 12 minutes. No need for them to be soft.
  4. Drain the potatoes, and place potatoes on a baking sheet lined with parchment paper. Drizzle the olive oil, salt, and pepper and bake for about 30 minutes or until cooked.
  5. Heat the jar of romesco sauce in a small saucepan.
  6. Pour potatoes into a bowl, top with the garlic mayo, romesco sauce, and parsley, and enjoy.
