Preheat oven to 425
In a mini food processor, blend together all the garlic mayo ingredients and place them in the fridge until ready.
Boil water (about 2.5 cups) with salt. Once the water is boiled, place the halved potatoes and par-boil (cook) them for about 12 minutes. No need for them to be soft.
Drain the potatoes, and place potatoes on a baking sheet lined with parchment paper. Drizzle the olive oil, salt, and pepper and bake for about 30 minutes or until cooked.
Heat the jar of romesco sauce in a small saucepan.
Pour potatoes into a bowl, top with the garlic mayo, romesco sauce, and parsley, and enjoy.
