Ingredients
  

  • 8 pasture-raised eggs
  • 1 cup full fat cottage cheese
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 cup grated Gruyère cheese
  • 5 slices cooked bacon rough chopped
  • 2 tbsp minced chives
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 350°
  2. In a large skillet set to medium heat, cook the bacon until crispy on both sides.
  3. Meanwhile, in a blender, add the eggs, cottage cheese, onion powder, garlic powder, salt, and pepper. Blend well to incorporate everything.
  4. Pour them evenly into a nonstick muffin pan. Then top with cheese, bacon, and chives.
  5. Bake for about 20 minutes. Allow to cool and then store them in an airtight container for up to 5 days.
  6. To reheat, place in a toaster oven or microwave.
