Looking for the easiest, quickest breakfast for those rushed mornings. These blender Mexican Chocolate Chia Seed Pudding is the healthiest and delicious breakfast item.

On days I’m feeling lazy or don’t have much food in the house, I turn to some sort of chia seed pudding. You most likely would have everything to make it and there are so many ways to flavor them. My boys requested a chocolate chia pudding so I figured, why not make them a Mexican Chocolate Chia Seed Pudding.

If you haven’t had Mexican hot chocolate, I highly recommend you make some. It’s so incredibly tasty and made with cinnamon and sometimes a pinch of chili powder for a slight kick. You can certainly add that into this pudding but since I was making them for the kids, I opted not to. You can buy the yummy hot chocolate bars HERE or at any grocery store (Trader Joes, Whole Foods, Lucky’s, etc… I find Mexican Hot Chocolate to be way more flavorful than the regular kind and with each sip, it reminds me of my childhood.

Cinnamon granola is so good you guys. I love making homemade granola because you can use any nuts and oats you truly love and spruce it up with any flavorings you love. During the Fall/Winter time, I add vegan chocolate chips and pumpkin spice seasoning and my boys go to town.

Feel free to use any nut milk you like. I made fresh pumpkin milk and used that but I’ve made this with almond and a can of coconut milk and all are amazing.

Mexican Chocolate Chia Seed Pudding

This Mexican Chocolate Chia Seed Pudding is the perfect breakfast or dessert.

Ingredients
  

  • Cinnamon Spice Granola
  • 1 cup rolled oats
  • 1 cup rough chopped walnuts
  • 1/2 cup rough chopped pecans
  • 1/2 cup pumpkin seeds
  • 1/4 cup chia seeds
  • 1/4 cup cacao nibs
  • 1/4 cup coconut oil
  • 1 tbsp ground cinnamon
  • 1/4 tsp salt
  • Chia Seed Pudding
  • 2 1/4 cup of nut milk
  • 1/3 cup plus 3 tbsp of chia seeds
  • 1/2 tsp ground cinnamon
  • 1/4 cup cacao powder
  • 1/2 tsp vanilla extract or vanilla bean paste
  • 2 tbsp maple syrup
  • Tiny pinch of salt

Instructions
 

  • Granola-preheat oven to 325
  • In a large bowl, add all the granola ingredients and mix well. Spread evenly onto a baking sheet lined with parchment paper. Bake for about 20-25 minutes. You can prep this ahead of time and store it in an airtight container.
  • Meanwhile, in a blender, add all the chia seed pudding ingredients and blend well for about 30 seconds. Pour them into cups, or bowls, and place them into the fridge for about 10-15 minutes just to get it cold or while the granola is baking.
  • Remove the granola from the oven and allow to cool for a few minutes. Top them on the Mexican Chocolate Chia Seed Pudding and enjoy!
