Fennel and Brussel Sprout Salad

I enjoy a good salad and I love brussel sprouts and fennel. Fennel has a delicious yet subtle licorice flavor and can be eaten raw or roasted. I prefer them raw in salads because it has a nice refreshing crunch like celery.

Brussel sprouts is a veggie I can eat in any which way or form. In this dish, I blanched them for just a minute in boiling hot water and drained them. This helps to soften things up so it’s not an entirely crunchy salad.

For some added protein, I added pumpkin seeds/pepitas but you can certainly add any nut of choice. Walnuts would be a great addition in here as well. Lightly toast them and add it for extra nuttiness.

I decided to add pomegranate seeds for that refreshing juicy fruity flavor. Dried cranberries, strawberries, or raspberries would even be a great option in here as well. Choose something red for that pop of color. Brightens the whole salad up.

Fennel Brussel Sprout Salad

A simple refreshing salad that's quick to whip up.

Ingredients
  

  • 1 bag of brussel sprouts shredded
  • 1-2 fennel bulbs cut in half and sliced
  • 1/4 cup pepitas
  • 1/4 cup pomegranate seeds
  • Dressing
  • 1/3 cup olive oil
  • 3 tbsp apple cider vinegar
  • 3 tbsp lemon juice
  • 2 tbsp honey
  • 1.2 tsp dijon mustard
  • 1 grated garlic
  • salt and pepper taste

Instructions
 

  • Mix all the dressing ingredients in a mason jar and shake well. Set aside.
  • Heat a large pot halfway with water and bring to a boil.
  • Add the shredded brussels in the hot water and blanch for 1 minute. Remove and lay on a paper towel to dry off somewhat.
  • In a salad bowl, add the remaining salad ingredients including the brussel sprouts, and dress it with some of the dressing. Toss and serve.
