Fennel Brussel Sprout Salad

A simple refreshing salad that's quick to whip up.

Ingredients
  

  • 1 bag of brussel sprouts shredded
  • 1-2 fennel bulbs cut in half and sliced
  • 1/4 cup pepitas
  • 1/4 cup pomegranate seeds
  • Dressing
  • 1/3 cup olive oil
  • 3 tbsp apple cider vinegar
  • 3 tbsp lemon juice
  • 2 tbsp honey
  • 1.2 tsp dijon mustard
  • 1 grated garlic
  • salt and pepper taste

Instructions
 

  • Mix all the dressing ingredients in a mason jar and shake well. Set aside.
  • Heat a large pot halfway with water and bring to a boil.
  • Add the shredded brussels in the hot water and blanch for 1 minute. Remove and lay on a paper towel to dry off somewhat.
  • In a salad bowl, add the remaining salad ingredients including the brussel sprouts, and dress it with some of the dressing. Toss and serve.
