Fennel Brussel Sprout Salad

Ingredients

bag of brussel sprouts
shredded
1-2
fennel bulbs
cut in half and sliced
1/4
cup
pepitas
1/4
cup
pomegranate seeds
Dressing
1/3
cup
olive oil
3
tbsp
apple cider vinegar
3
tbsp
lemon juice
2
tbsp
honey

tsp
dijon mustard

grated garlic
salt and pepper taste
Instructions
Mix all the dressing ingredients in a mason jar and shake well. Set aside.
Heat a large pot halfway with water and bring to a boil.
Add the shredded brussels in the hot water and blanch for 1 minute. Remove and lay on a paper towel to dry off somewhat.
In a salad bowl, add the remaining salad ingredients including the brussel sprouts, and dress it with some of the dressing. Toss and serve.
