Boy oh boy do I have a tasty pizza recipe for you. It’s vegan, gluten-free, and kid-friendly. To serve it for kiddos, I recommend going light on the buffalo sauce or omitting it and just using crispy chickpeas. My boys love it served with a little mild buffalo sauce and drizzled with the ranch. It was a huge hit with the family and I hope you enjoy it as well.

Ingredients

  • gluten-Free and vegan pizza crust
  • marinera sauce
  • hot sauce
  • mild buffalo sauce
  • vegan mozzarella
  • celery
  • red onions
  • chickpeas
  • herby vegan ranch
  • parsley
  • kale

Once the pizza is fresh out of the oven, I like to then top it with minced celery so that it’s nice and crispy throughout each bite.

The products I used for the pizza are clean as can be minus maybe the cheese. The marinara is from Rao’s, the cheese is Daiya’s, the ranch is from THIS recipe, buffalo sauce is Noble Made, and the pizza crust is from a local gluten-free bakery called Unrefined Bakery.

Ingredients
  

  • 1 can chickpeas drained and rinsed
  • 1/3 cup vegan cheese
  • 1/3 cup marinera sauce
  • 2 tsp hot sauce
  • 3 tbsp red onions diced small
  • 1 celery stick diced small
  • 1/4 cup kale chopped
  • 1/3 cup mild buffalo sauce
  • gluten-free and and vegan pizza crust
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°
  • In a small bowl, add the marinara sauce and hot sauce and mix.
  • On a baking dish lined with parchment paper, add the chickpeas, 2 tbsp olive oil, salt, and pepper.
  • Roast the chickpeas for about 15 minutes. The chickpeas should be almost crispy but not quite.
  • Remove from the oven and toss with the buffalo sauce (reseerving a few tbsp of the sauce).
  • Assmeble the pizza starting with the marinara sauce, cheese, kale, red onions, and buffalo chickpeas. Roast for about 12 minutes or whatever your pizza crust requires.
  • Remove from the oven, add the diced celery, and the herby ranch (recipe linked in the blog post).
  • Slice and enjoy!
