- 5 ounce box of little gem or butter lettuce
- 1 persimmon sliced
- 1/4 cup pomegranete seeds
- 1/4 cup raw pumpkin seeds
- 2 tbsp fresh dill
- DRESSING
- 1/4 cup olive oil
- 1 tsp dijon mustard
- 1/2 lemon juiced
- salt and pepper to taste
In a small bowl, whisk together the lemon juice, dijon, salt, pepper. Then, slowly add in the olive oil while whisking and set aside.
In a salad bowl or platter, add the lettuce, and remaining salad ingredients. Dress the salad and enjoy.
*Only dress the salad with dressing once you are ready to serve. the salad can be made early morning and dressed before dinner.
