Preheat oven to 400°
On a small baking sheet, add the bread and 2 tbsp of olive oil, onion powder, dash of salt, and Italian seasoning. Toss and bake for about 8-10 minutes.
In a large pot, add the remaining olive oil, onions, garlic, salt, and pepper cook for about 5 minutes.
Add in the thyme and sage and cook for about 1 minute.
Add in the cauliflower, beans, broth, salt, and pepper. Cover and cook for about 20-25 minutes.
Once the cauliflower is fork-tender, using an immersive blender or regular blender would work, belnd the ingredients together until is smooth, silky, and creamy.
Top with croutons and fresh cracked pepper and enjoy.
