Watercress Mandarin Salad

- 1 bunch of watercress washed and dried
- 1 cutie or mandarin peeled
- 1/2 Persian cucumber sliced
- 1 radish sliced
- 1 small watermelon radish chopped
- 1/4 cup chopped raw almonds
- 1/2 cup snow peas
- 2 tbsp microgreens
- 1/4 cup Primal Kitchen sesame ginger dressing
- 1/4 cup navy beans drained and rinsed (optional
Heat a small saucepan with boiling water. Add the snow peas and boil for about 2-3 minutes. Remove and place them directly in a small bowl of cold ice water.
Meanwhile, on a large plate, add the watercress, radishes, watermelon radishes, almonds, cucumbers, mandarins, snow peas, and microgreens. You can add 1/4 cup of canned beans for extra protein if needed. Totally optional.
Add the dressing.
Toss and enjoy.
