Method
- Heat a small saucepan with boiling water. Add the snow peas and boil for about 2-3 minutes. Remove and place them directly in a small bowl of cold ice water.
- Meanwhile, on a large plate, add the watercress, radishes, watermelon radishes, almonds, cucumbers, mandarins, snow peas, and microgreens. You can add 1/4 cup of canned beans for extra protein if needed. Totally optional.
- Add the dressing.
- Toss and enjoy.
