Tomato Basil Pasta with Burrata and Truffle Oil

Ingredients
  

  • gluten-free pasta
  • 16 oz or 1lb of cherry tomatoes
  • 2 tbsp olive oil
  • 1 cup fresh torn basil
  • 1/3 cup fresh torn tarragon
  • 3 garlic cloves sliced
  • 1/2 lemon zested
  • salt dnd pepper to taste
  • 1 ball of fresh burrata cheese
  • 2 tsp truffle oil

Instructions
 

  • Make the pasta according to the package.
  • Meanwhile, in a large skillet set to medium heat, add 1 tbsp olive oil, tomatos, salt, and pepper. Cook the tomatoes for about 12 minutes making sute to stir or mix it every couple minutes to prevent them from burning.
  • Next, add the sliced garlic and cook for another 1 minutes. Turn off the heat and add the lemon zest, tarragon, cooked pasta, remaining olive oil, and torn basil. Season with a little more salt and pepper and plate the pasta in a large bowl.
  • Add the burrata at the center of the pasta and top with a little more basil and olive oil.
