Ingredients
  

  • 4 cups cooked chicken loosely shredded I use rotisserie chicken
  • 1/2 cup finely diced celery
  • 1/2 cup finely diced red onion
  • 1/2 cup fresh or defrosted corn
  • 1/2 avocado diced
  • 2 tbsp finely chopped fresh tarragon leaves
  • 1 tbsp fresh chopped basil
  • 4 tbsp homemade mayo
  • 1 tsp dijon mustard
  • kosher salt to taste
  • black pepper to taste

Method
 

  1. In a large bowl, combine all the ingredients EXCEPT the avocado and mix well. Add the avocado a gently toss.
  2. Serve over arugula salad or with crackers.
