fresh or defrosted corn

avocado
diced

finely chopped fresh tarragon leaves

fresh chopped basil

homemade mayo

dijon mustard
kosher salt
to taste
black pepper
to taste
Method
In a large bowl, combine all the ingredients EXCEPT the avocado and mix well. Add the avocado a gently toss.
Serve over arugula salad or with crackers.
