Ingredients
  

  • 2 cup gluten-free rolled oats
  • 2 cups oat milk or any milk of choice
  • 2 tbsp ground flaxseeds mixed with 5 tbsp water or 2 eggs
  • 3 tbsp rose water
  • 1 ¼ cups sliced strawberries
  • ¼ cup maple syrup
  • 1 zucchini grated and moisture squeezed out
  • 2 tbsp chopped basil
  • 2 tbsp coconut oil melted
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • handful vegan chocolate chips for garnish

Method
 

  1. Preheat oven to 350°
  2. In a large bowl, add the flaxseeds and water, whisk.
  3. Next add in the maple syrup, rose water, salt, coconut oil, cinnamon, and milk. whisk together.
  4. Add in the remaining ingredients EXCEPT for the chocolate chips. Fold in the ingredients to mix being careful with the strawberries.
  5. Pour the batter into a lightly greased 8x8 baking dish. Top with chocolate chips and bake for about 30-35 minutes.
  6. Allow for the batter to cool for about 5 minutes before cutting and serving.
  7. Enjoy!
