Preheat oven to 375°
In a large bowl, add the wedged potatoes, olive oil, 1/2 of the packet of onion soup mix, salt, and pepper to taste. Mix and lay them sideways on a large baking sheet lined with parchment paper. Do not overlap.
In the same bowl, add the ground beef, grated onion, egg, garlic, parsley, ketchup, remaining onion soup mix, salt, and pepper to taste. Mix well with hands making sure not to over mix.
Form equal size patties using a 1/4 cup measurement. Form into ovals and lay them on top of the potatoes.
Pour the vegetable juice on top of it all and bake for about 30 minutes.
Serve and enjoy!
**Note: If the potatoes are cut thick, bake them first for about 10 minutes or so and then add the meat and sauce on top after. You don't want the beef to cook before the potatoes.
