Method
- Preheat oven to 400°
- Trim just part of the stem/leaves off the carrots. I like to leave a little because it looks pretty.
- On a large baking sheet, add the carrots, olive oil, salt, and pepper. Roast in the oven for about 20 minutes.
- Meanwhile, make the Vegan Whipped Feta by placing all the ingredients into a mini food processor and blending until nice and smooth.
- Plate the carrots and drizzle some of the whipped feta. Top with chopped pistachios and enjoy!
