Roasted Rainbow Carrots with Vegan Whipped Feta

A simple and delicios side dish that is perfect for pairing with nan of your favorite main dishes.

Ingredients
  

  • 2 bunches of rainbow carrots or regular carrots with the stem and leaves
  • 1.5 tbsp olive oil
  • salt and pepper to taste
  • 1 tsp fresh dill
  • 1 tsp fresh mint
  • VEGAN WHIPPED FETA
  • 3/4 block of vegan feta cheese I like Violife
  • 1/3 cup vegan sour cream
  • 1/4 cup vegan plain yogurt
  • 1/2 lemon juiced and zested
  • 1 garlic clove
  • 3 sprigs of fresh mint
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°
  • Trim just part of the stem/leaves off the carrots. I like to leave a little because it looks pretty.
  • On a large baking sheet, add the carrots, olive oil, salt, and pepper. Roast in the oven for about 20 minutes.
  • Meanwhile, make the Vegan Whipped Feta by placing all the ingredients into a mini food processor and blending until nice and smooth.
  • Plate the carrots and drizzle some of the whipped feta. Top with chopped pistachios and enjoy!
