Roasted Garlic and Thyme Tomatoes

A delicious side dish that will take you tomatoes to the next-level.

Ingredients
  

  • 8-10 roma tomatoes
  • 2 tbsp olive oil
  • 2 garlic cloves sliced thin
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh oregano leaves rough chopped
  • 1 tsp fresh sliced basil
  • salt and pepper to taste
  • flaky sea salt optional

Equipment

  • baking sheet

Method
 

  1. Preheat oven to 450
  2. Slice the tomatoes lengthwise without cutting all the way through.
  3. On a baking sheet lined with parchment paper, add the tomatoes and the remaining ingredients EXCEPT for the flaky sea salt. Roast for about 30-35 minutes.
  4. Remove from the oven and top with flaky sea salt and extra herbs, and enjoy!
