Lemony Hearts of Palm Arugula Salad
A delicious lemon arugula salad packed with a lemon citrus vinegarette and hearts of palm.

- 2 ½ packed cups of arugula
- 1 can hearts of palm drained, rinsed, and sliced into rounds
- 2 celery sliced thin
- 1/4 of red onion thinly sliced
- 1/4 cup Castelvestrano pitted olives or any green olive, sliced
- 1/4 cup cherry tomatoes halved
- fresh mint for garnish
- 1 small lemon juiced
- 1/4 cup olive oil
- 1 tsp dijon mustard
- salt and pepper to taste
In a small bowl, whisk together the last 4 ingredients and set aside.
In a large bowl, add all the salad ingredients. Top with a little dressing, toss to combine and serve.
