packed cups of arugula

can hearts of palm
drained, rinsed, and sliced into rounds

celery
sliced thin
1/4
of red onion
thinly sliced
1/4
cup
Castelvestrano pitted olives
or any green olive, sliced
1/4
cup
cherry tomatoes
halved
fresh mint for garnish

small lemon
juiced
1/4
cup
olive oil

tsp
dijon mustard
salt and pepper to taste
Method
In a small bowl, whisk together the last 4 ingredients and set aside.
In a large bowl, add all the salad ingredients. Top with a little dressing, toss to combine and serve.
