Ingredients
  

  • SALMON BURGERS
  • 2 lb salmon skin-off and de-boned
  • 1 tbsp chopped fresh dill
  • 1 egg
  • 2 tsp cassava flour plus 1/3 cup
  • 2 tbsp dijon mustard
  • 1.5 tbsp capers
  • 1 shallot chopped
  • 1 lemon zested
  • 1/2 lemon juiced
  • salt and pepper to taste
  • 2 tbsp olive oil for cooking
  • LEMON CAPER SAUCE
  • 1/2 cup plain coconut yogurt
  • 1 lemon zested
  • 1.5 tbsp lemon juice
  • 1.5 tbsp capers chopped
  • 1 tsp dill chopped
  • salt and pepper to taste

Instructions
 

  • Make the lemon caper sauce: mix all ingredients into a bowl and set aside.
  • Salmon Burgers: in a food processor, add in the salmon and blend for about 4 seconds. Don't Fully Mix Yet.
  • Add in the remaining ingredients EXCEPT for 1/3 cup cassava flour and olive oil. Blend for another 6-8 seconds. Don't overmix.
  • Add the 1/3 cup cassava flour onto a large plate or bowl.
  • Heat a cast-iron skillet or non-stick skillet with olive oil.
  • Form your patties and dip each side into cassava flour. Cook for about 4-5 minutes per side.
