- BUFFALO CHICKEN MEATBALLS
- 1½ lbs ground chicken
- 1/4 red onion diced
- 3 tbsp minced parsley
- 1/4 cup cassava flour or tapioca flour
- 2 tbsp garlic powder
- 1 tbsp onion powder
- 2 tbsp vegan ranch recipe linked in blog post
- 2 tbsp buffalo sauce plus 1/3 cup for drizzle
- salt and pepper to taste
- SALAD
- 1½ heads of romaine lettuce chopped
- 1 bag coleslaw
- 1/4 cup vegan ranch recipe linked in blog post, plus more for serving
- 3 celery stalks sliced
- 1/2 red onion sliced
- 1/2 cup sliced cherry tomatoes
- 1 sliced avocado
Preheat oven to 375°
In a bowl, add all the meatball ingredients EXCEPT the 1/3 cup of buffalo sauce. Only add 2 tbsp of buffalo sauce. Mix well with your hands and form meatballs. Place them on a parchment paper-lined baking sheet and drizzle the remaining buffalo sauce right on top.
Bake meatballs for about 20 minutes.
In a large bowl, add the coleslaw and romaine lettuce. Then add the ranch dressing. Toss well.
On a platter, add the salad mix, and the meatballs, and top with sliced red onions, avocado, celery, and more ranch.
Serve and enjoy.
