In a measuring cup, add all the honey mustard sauce ingredients and mix well. Set aside.
Meanwhile, heat a cast iron skillet to medium heat. Add about 1 tbsp at a time of olive oil. Season chicken with all the chicken spices and mix well. Once the skillet is hot, add the chicken and cook for about 4-5 min per side. You may need to do them in batches.
Add all the chicken back into the skillet and drizzle the honey mustard sauce on top. Reserve 1/4 of the sauce for topping. Spread the chicken evening in the skillet. Add the cheese. Put a lid on top for about 5 minutes until it’s melted.
*you can also add the cast iron skillet into a 400° preheat oven (turned off) until the cheese melts.
Serve with warm brioche bun, pickles, and more honey mustard sauce.
