Healing Lemon Chicken Soup

Ingredients
  

  • Homemade Bone Broth
  • 2 rotisserie chicken carcass
  • 2 bay leaves
  • 1 tbsp apple cider vinegar
  • 1 red onion skin on and quartered
  • 1/2 tbsp dried turmeric
  • 2 carrots cut in half
  • 2 celery stalks cut in half
  • 1 tbsp peppercorns
  • 2 garlic cloves
  • filtered water filled to the top

  • 5 cups homemade bone broth or any broth preferred
  • 2 cups of cooked shredded chicken
  • 2 celery stalks sliced
  • 3 carrots peeled and sliced
  • 1 lemon juiced
  • 1 zucchini cut lengthwise and sliced
  • 2 Yukon potatoes diced
  • 1 tbsp chopped thyme
  • 1 tbsp chopped oregano
  • 1 tbsp chopped parsley
  • 1 tsp of turmeric
  • 1/2 yellow onion diced
  • 1 garlic clove finely chopped
  • olive oil
  • salt and pepper to taste

Method
 

  1. Homemade Bone Broth
  2. Add all ingredients into a stalk pot or crockpot and cook on low for 6-9 hours. I prefer to do mine for 9 hours but if you're short on time, 4 hours will do. Keep in mind, the longer the better for homemade bone broth.
  3. Check on the broth every few hours and add more water if needed.
  4. Once cooking time is complete, add a large bowl in the sink and a fine mesh strainer on top.
  5. Gently pour the broth through the strainer and discard all the veggies, carcass, etc...
  6. Allow broth to cool in the bowl before storing it in the fridge or freezer. I don't season mine until I cook with it but you can certainly do it in this step if you prefer.
  7. Healing Lemon Chicken Soup
  8. In a large stalk pot, add the olive oil and sautee the onions, potatoes, celery, carrots, and garlic. Season with salt and pepper and cook for about 6-7 minutes.
  9. Add the broth, parsley, oregano, thyme, turmeric, and lemon juice. Start with 1/2 lemon, juiced and if you like it lemony like me, add the other half. Cook until potatoes are almost soft, about 20 minutes.
  10. Add the zucchini and chicken and cook for another 10-12 minutes or until zucchini is soft but not mushy.
  11. Season with more salt and pepper and serve.
