Halloumi Lettuce Tacos
A delicious easy meatless meal that is perfect for lunch or a light dinner. Crispy Halloumi cheese, mashed avocado, black beans, pickled red onions, and all the things that make this a light and tasty meal.

- 2 package of Halloumi cheese sliced
- 2 radishes juliened
- ½ can black or pinto beans drained and rinsed
- 2 avocados
- ½ lime juiced
- 2 carrots grated
- salt and pepper to taste
- 2 containers of butter lettuce-about 16-18 leaves
- pickled red onions optional
- cilantro for garnish
- 1½ tbsp olive oil
- ¼ cup choped macadamia nuts optional
In a medium bowl, add the avocado, lime juice, salt and pepper and mash. Set aside.
Heat a non-stick skillet on medium-hight heat with olive oil and sear the sliced cheese for about 4-5 min per side.
To assemble, take your butter lettuce, scoop some of the avocado, add a little of the beans, top with the halloumi cheese, grated carrots, radishes, and pickled red onion. Top with cilantro and macadamia nuts and enjoy.
