Ingredients
  

  • Benedict Ingredients
  • 4 cauliflower patties
  • 2 slices of whole 30 turkey bacon
  • 1 cup of spinach
  • 4 eggs
  • 1/2 avocado sliced
  • salt and pepper to taste
  • 1 tsp lemon juice
  • dash of paprika
  • Hollandaise Sauce
  • 3 egg yolks
  • 7 tbsp ghee melted
  • 1 tbsp lemon juice
  • dash of whole 30 compliant hot sauce I like Siete
  • dash of turmeric and salt optional

Method
 

  1. Hollandaise Sauce
  2. In a blender, add the egg yolk, lemon juice, hot sauce, and turmeric
  3. Turn blender on medium and drizzle in the melted ghee
  4. Blend for almost 3 minutes until it thickens up.
  5. Benedict
  6. Heat a cast-iron skillet on medium and spray with a non-stick oil
  7. Cook the cauliflower patties for about 5 minutes per side or until cooked through. Remove and set aside.
  8. In the same skillet, cook the turkey bacon and remove and set aside.
  9. sautee the spinach in a little bit of avocado oil, salt, and pepper. Maybe 2 min and remove and squeeze a bit of lemon.
  10. Next, boil a huge pot of water. Add a dash of apple cider vinegar or white.
  11. With a slotted spoon, start creating a whirlpool by stirring the pot of water with the spoon.
  12. Crack an egg into the whirlpool (make sure you do this one by one). Cook egg for about 3 minutes and remove and place on paper towel to soak excess water
  13. Do the same thing for each egg.
  14. To Assemble: start with cauliflower patty, add the spinach, the turkey bacon, poached egg, and avocado. Drizzle the hollandaise sauce on top and finish with a little paprika.
