Hollandaise Sauce
In a blender, add the egg yolk, lemon juice, hot sauce, and turmeric
Turn blender on medium and drizzle in the melted ghee
Blend for almost 3 minutes until it thickens up.
Benedict
Heat a cast-iron skillet on medium and spray with a non-stick oil
Cook the cauliflower patties for about 5 minutes per side or until cooked through. Remove and set aside.
In the same skillet, cook the turkey bacon and remove and set aside.
sautee the spinach in a little bit of avocado oil, salt, and pepper. Maybe 2 min and remove and squeeze a bit of lemon.
Next, boil a huge pot of water. Add a dash of apple cider vinegar or white.
With a slotted spoon, start creating a whirlpool by stirring the pot of water with the spoon.
Crack an egg into the whirlpool (make sure you do this one by one). Cook egg for about 3 minutes and remove and place on paper towel to soak excess water
Do the same thing for each egg.
To Assemble: start with cauliflower patty, add the spinach, the turkey bacon, poached egg, and avocado. Drizzle the hollandaise sauce on top and finish with a little paprika.
