Grandma's Armenian Chicken Salad

This chicken salad is unlike anything you have ever had before. It'll quickly change the way you make chicken salad.

Ingredients
  

  • 1 cooked rotisserie chicken shredded
  • 3 tablespoons of Mayo or any mayo of choice
  • 2 russet potatoes peeled and chopped
  • 1 yellow onion grated
  • 1 tbsp avocado oil
  • 1/2 lemon juiced
  • 1/2 bag of frozen peas and carrots thawed
  • salt and pepper to taste

Method
 

  1. Boil a medium-size pot with filtered water and add a dash of salt.
  2. Once boiling, add the potatoes and cook until soft (about 15 minutes)
  3. While potatoes are cooking, grate the onion into a large bowl and add the shredded chicken.
  4. Once potatoes are soft, drain them and mash them in the pot and add them into the bowl with the onions and chicken.
  5. Add the mayo, oil, lemon juice, salt, pepper, and thawed peas and carrots.
  6. Feel free to adjust mayo and seasonings as needed but the more pepper the better. My grandma loved pepper and it tastes amazing with lots of it in the salad.
