Grandma's Armenian Chicken Salad

This chicken salad is unlike anything you have ever had before. It'll quickly change the way you make chicken salad.

Ingredients
  

  • 1 cooked rotisserie chicken shredded
  • 3 tablespoons of Mayo or any mayo of choice
  • 2 russet potatoes peeled and chopped
  • 1 yellow onion grated
  • 1 tbsp avocado oil
  • 1/2 lemon juiced
  • 1/2 bag of frozen peas and carrots thawed
  • salt and pepper to taste

Instructions
 

  • Boil a medium-size pot with filtered water and add a dash of salt.
  • Once boiling, add the potatoes and cook until soft (about 15 minutes)
  • While potatoes are cooking, grate the onion into a large bowl and add the shredded chicken.
  • Once potatoes are soft, drain them and mash them in the pot and add them into the bowl with the onions and chicken.
  • Add the mayo, oil, lemon juice, salt, pepper, and thawed peas and carrots.
  • Feel free to adjust mayo and seasonings as needed but the more pepper the better. My grandma loved pepper and it tastes amazing with lots of it in the salad.
