Boil a medium-size pot with filtered water and add a dash of salt.
Once boiling, add the potatoes and cook until soft (about 15 minutes)
While potatoes are cooking, grate the onion into a large bowl and add the shredded chicken.
Once potatoes are soft, drain them and mash them in the pot and add them into the bowl with the onions and chicken.
Add the mayo, oil, lemon juice, salt, pepper, and thawed peas and carrots.
Feel free to adjust mayo and seasonings as needed but the more pepper the better. My grandma loved pepper and it tastes amazing with lots of it in the salad.
