Ingredients
  

  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 3 carrots peeled and diced
  • 1 fennel halved and sliced
  • 4 garlic cloves sliced
  • 1 lb ground Italian sausage
  • 1 tbsp dried oregano
  • 1 tsp dried fennel
  • 1 14 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 4 cups chicken broth
  • 9 ounce package gluten-free tortellini, I like Taste Republic Brand
  • 1/2 bunch swiss chard chopped
  • salt and pepper to taste

Instructions
 

  • In a large pot, heat to medium/low. Add in the onions, carrots, fennel, and garlic. Cook for about 5-6 minutes. Add salt and pepper to taste.
  • Next, add in the sausage and cook through making sure to break it up good.
  • Once the sausage is fully cooked, add in the dried oregano, fennel, diced tomatoes, tomato sauce, broth and cook until it simmers.
  • Once it's simmering, add in the tortellini and swish chard. Cook for another 5-6 minutes (according to the tortellini package).
  • Season with more salt and pepper and enjoy!
