- 2 tbsp olive oil
- 1 yellow onion diced
- 3 carrots peeled and diced
- 1 fennel halved and sliced
- 4 garlic cloves sliced
- 1 lb ground Italian sausage
- 1 tbsp dried oregano
- 1 tsp dried fennel
- 1 14 oz can diced tomatoes
- 1 8 oz can tomato sauce
- 4 cups chicken broth
- 9 ounce package gluten-free tortellini, I like Taste Republic Brand
- 1/2 bunch swiss chard chopped
- salt and pepper to taste
In a large pot, heat to medium/low. Add in the onions, carrots, fennel, and garlic. Cook for about 5-6 minutes. Add salt and pepper to taste.
Next, add in the sausage and cook through making sure to break it up good.
Once the sausage is fully cooked, add in the dried oregano, fennel, diced tomatoes, tomato sauce, broth and cook until it simmers.
Once it's simmering, add in the tortellini and swish chard. Cook for another 5-6 minutes (according to the tortellini package).
Season with more salt and pepper and enjoy!
