Ingredients
  

  • DECONSTRUCTED BEEF KOFTA
  • 1/2 lb grouond beef
  • 1/2 lb ground grassfed lamb
  • 1 tbsp olive oil
  • 3 garlic cloves minced
  • 1 red onion sliced
  • 1 tsp sumac
  • 1 tsp allspice
  • 1/2 tsp cardamom
  • 1/2 tsp paprika
  • 1/3 cup bunch parsely minced
  • 1/4 cup fresh mint rough chopped
  • 1/4 cup pomegranate seeds
  • 1 tbsp lemon zest
  • Tahini for drizzle
  • hummus for serving
  • salt and pepper to taste
  • CUCUMBER SALAD
  • 1 cucumber diced
  • 1 cup cherry tomatoes quartered
  • 1/3 cup diced red onions
  • 1/2 bunch curly parsley minced
  • 1 lemon juiced
  • 3 tbsp olive oil
  • 1/2 tsp sumac
  • salt and pepper to taste

Instructions
 

  • To make thecucumber salad, mix all the ingredients in a bowl and set aside.
  • To make the Kofta, add olive oil, garlic, and onions. Sautee for about 5 minutes.
  • Next add in the beef and lamb and ground it up. Once it's almost cooked through, add in all the seasonings.
  • Once it's finished cooking, top with fresh parsely, mint, pomegranate seeds, and a little lemon zest.
  • Serve spreading hummus onto the plate. Then top with the meat any extra granishes, tahini, and anything else you desire.
