- Using a vegetable peeler, thinly slice the cucumbers into thin strips.
- In a bowl, mash the avocado with a fork and add the salt, pepper, and lemon juice.
- Lay one strip of cucumber down and thinly spread some of the avocados from one end to the other.
- Top with hemp seeds and fresh herbs and roll.
- Continue to do the rest and enjoy.
