Cucumber Avocado Sushi Rolls
Refreshing grain-free and vegan sushi rolls made that's easy and healthy to make.

- 1 English cucumber
- 1 avocado mashed
- 1/2 lemon juiced
- 1/4 cup fresh mint and basil rough chopped
- 2 tbsp hemp seeds
- salt and pepper to taste
Using a vegetable peeler, thinly slice the cucumbers into thin strips.
In a bowl, mash the avocado with a fork and add the salt, pepper, and lemon juice.
Lay one strip of cucumber down and thinly spread some of the avocados from one end to the other.
Top with hemp seeds and fresh herbs and roll.
