Cucumber Avocado Sushi Rolls

Refreshing grain-free and vegan sushi rolls made that's easy and healthy to make.

Ingredients
  

  • 1 English cucumber
  • 1 avocado mashed
  • 1/2 lemon juiced
  • 1/4 cup fresh mint and basil rough chopped
  • 2 tbsp hemp seeds
  • salt and pepper to taste

Instructions
 

  • Using a vegetable peeler, thinly slice the cucumbers into thin strips.
  • In a bowl, mash the avocado with a fork and add the salt, pepper, and lemon juice.
  • Lay one strip of cucumber down and thinly spread some of the avocados from one end to the other.
  • Top with hemp seeds and fresh herbs and roll.
  • Continue to do the rest and enjoy.
