Cajun Shrimp and Kielbasa Packets

Ingredients
  

  • 3/4 lb wild-caught shrimp peeled and deviened
  • 1 kielbasa sausage sliced
  • 1 yellow onions sliced
  • 1 red bell pepper sliced
  • 2 yukon potaoes sliced very thin and cut in half
  • 1 cup green beans
  • 2 tbsp old bay seasoning
  • 1.5 tbsp olive oil
  • 2 tbsp of butter divided into 4

Instructions
 

  • °Preheat oven to 400
  • In a large bowl, add all of the ingredients EXCEPT the butter. Toss well.
  • On 4 sheets of parchemtn paper, evenly divide up the mixture.
  • Fold the top half of the parchment over the fish, overlapping small folds along the edges and sealing.
  • Bake for about 15 minutes.
  • Transfer the parchment packets to plates. Carefully cut the packets open, avoiding the hot steam and serve.
