Cajun Shrimp and Kielbasa Packets

- 3/4 lb wild-caught shrimp peeled and deviened
- 1 kielbasa sausage sliced
- 1 yellow onions sliced
- 1 red bell pepper sliced
- 2 yukon potaoes sliced very thin and cut in half
- 1 cup green beans
- 2 tbsp old bay seasoning
- 1.5 tbsp olive oil
- 2 tbsp of butter divided into 4
°Preheat oven to 400
In a large bowl, add all of the ingredients EXCEPT the butter. Toss well.
On 4 sheets of parchemtn paper, evenly divide up the mixture.
Fold the top half of the parchment over the fish, overlapping small folds along the edges and sealing.
Bake for about 15 minutes.
Transfer the parchment packets to plates. Carefully cut the packets open, avoiding the hot steam and serve.
