- 4 slices of bread of choice toasted
- 2 avocados mashed
- 3 cups snap peas sliced lengthwise
- 3 radishes sliced thin
- 1/4 cup basil rough chopped
- 1/4 cup mint rough chopped
- 1 tbsp chives chopped
- 2 tbsp parsley chopped
- 1/2 lemon juiced
- 1/2 lemon zested
- 1 tbsp olive oil
- salt and pepper to taste
- 1 tbsp hemp seeds
In a large bowl, add the sliced snap peas, radishes, basil, mint, chives, parsley, lemon zest, lemon juice, olive oil, salt, and pepper. Mix it well.
In a bowl, mash the avocado and add a little salt and pepper.
Top the avocado toast with the snap peas. Add some hemp seeds right on top and serve.
