Armenian Salad

This is a salad I grew up having for every holiday, potluck, friends function, etc...I's so healthy, light, and packed with so much flavor.

Ingredients
  

  • 1 head of romaine chopped
  • 1/2 cucumber sliced
  • 1 to mato diced
  • 1/2 bell pepper sliced
  • 1/2 red onion sliced
  • 1/2 cup pitted kalamata olives
  • 1/2 tbsp dried mint
  • 1/2 tbsp sumac optional
  • feta cheese optional
  • Dressing
  • 1/3 cup extra virgin olive oil
  • 1 lemon juiced
  • 1 tsp dried mint
  • dash of salt and pepper to taste

Method
 

  1. Instructions
  2. In a large salad bowl, add the romaine and top with all of the salad ingredients EXCEPT sumac and mint.
  3. In a small bowl, whisk together dressing ingredients. Adjust seasoning the dressing as needed. I love it lemony.
  4. Pour some of the dressing over the salad and mix well.
  5. Top with additional dried mint and sumac for extra flavor and color and enjoy.
